Days 5 & 6 -

Hello Everyone,
I have to apologize, I didn't write a blog yesterday so I am writing one that encompasses both. As for any significant changes there have been little. Yesterday my weight was down to 288.0 LB and today down again to 287.8 LB! Yesterday however, Larissa and I went to Wal-mart and I got a ton of low carb foods which was awesome because let's face it I was so tired of eggs and nothing but eggs! Today I had eggs for breakfast ( go figure), but my lunch was quite amazing! I had roast beef and monterey-cheddar lettuce roll-ups, carrots with a homemade spinach dip, and a couple hard boiled eggs (the irony is just killing me). The lack of support at work is really starting to up-set me, especially when they order Bo-jangles (a southern KFC for you northerners) and pizza for lunch and then make fun of me telling me that I need to lay off on the food that I'm not even eating. I know that getting into a better environment is exactly what I need, So I hope that this Job with Everest pulls through soon.

The only meal I didn't mention was dinner and I'll say what I had today and yesterday,

Dinner Yesterday - Baked Stuffed Mushrooms with Mozzarella, and the Homemade Spinach Dip cooked right in! YUM!!

Dinner Tonight - Burgers with Peppers and Onions mixed right in.

  2. eggs get old soooooo fast hahaha i definitely hear that! and dont let your coworkers get you down... just gotta try get a thick skin when you're there and tell em all to suck one lol

  3. Can I get the recipe for that spinach dip? Also if you can have salsa try poaching your eggs in it. I've been making my own fresh salsa(chopped tomatoes, garlic, scallions, peppers, cilantro, lime) but you can use jarred if you check the sugar content.
